About This Recipe

Banana Cinnamon Baked Oatmeal made with ripe, mashed bananas and a couple of spoonfuls of cinnamon. This baked oatmeal works as a meal prepped breakfast or as a late night snack.

Ingredients

  • 3 cups old fashioned oats
  • 2 scoops vanilla protein powder (i use whey)
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 3 medium ripe bananas
  • 1 tbsp butter
  • 2 tbsp maple syrup
  • 10 tbsp liquid egg whites (or 2 whole eggs)
  • 2 cups milk
  • ¼ cup powdered sugar
  • 1 tsp milk
  • ⅛ tsp vanilla extract
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350°F (177°C).
  2. In a large bowl, mix together the oats, protein powder, cinnamon, and baking powder.
  3. If your bananas aren't very ripe you may need to microwave them for 30 seconds to a minute to soften them up. Peel the bananas, place them into a bowl with the butter and microwave them until they are mashable. If your bananas are already ripe enough, they should be mashable as is.
  4. Add in the egg whites, milk, syrup, 1 tbsp of melted butter, and mashed bananas. Stir to combine.
  5. Spray a 13"x9" pan with oil and add the oat mixture.
  6. Bake for 35-40 minutes.
  7. In a small bowl, mix the powdered sugar, pinch of salt, vanilla, and 1 tsp of milk. Stir vigorously until a glaze has formed. If you need a few extra drops of milk to help things move, add it.
  8. Place the icing into a piping bag and drizzle over the top once the oatmeal has come out of the oven.
  9. This recipe makes 6 servings. Cut the oatmeal into 6 equal pieces.
