Boneless Ribs with Cauliflower Mac & Cheese - Weight Gain

About This Recipe

Country style pork ribs seasoned with a spice rub and topped with BBQ sauce.  They are served with a side of cauliflower mac and cheese and coleslaw.

Ingredients

  • 2 lbs country style pork ribs
  • ¼ cup BBQ sauce (find a vinegar or tomato based sauce)
  • 1 tsp salt
  • 1 tsp pepper
  • 1 Tbsp cumin
  • 1 Tbsp garlic powder
  • 1 Tbsp onion powder
  • 1 tsp paprika
  • 1 tsp chili powder
  • 5 cups raw macaroni noodles
  • 3 Tbsp butter
  • 6 Tbsp almond flour (regular flour is fine)
  • 1 ½ cups whole milk
  • 1 ½ cup cheddar jack cheese
  • Salt and pepper to taste
  • 2 ½ cups coleslaw mix
  • 1 Tbsp olive oil
  • ¼ cup mayonnaise
  • 1 Tbsp lemon juice
  • 1 Tbsp honey

Instructions

  1. Preheat your oven to 375°F.
  2. In a bowl mix together the seasonings. 1 tsp salt, 1 tsp pepper, 1 Tbsp cumin, 1 Tbsp garlic powder, 1 Tbsp onion powder, 1 tsp paprika, 1 tsp chili powder.
  3. Rub the seasonings into all sides of the meat. Bake for 30 minutes and check temperature. Bake until it has reached an internal temperature of at least 155°F.
  4. Cook the macaroni noodles until soft.
  5. In a sauce pan over medium heat, melt the butter and add in the flour to make a roux.  Mix thoroughly and cook for 2-3 minutes to brown.
  6. Add in the milk and stir continuously until it is smooth.  Bring to a boil and stir until thick.
  7. Add in 1 cup of cheese and stir.
  8. Stir in the noodles.  Season with salt and pepper to taste. Add the remaining ½ cup of cheese to the top after plating each serving!
  9. In a bowl, mix together ¼ cup mayonnaise, 1 Tbsp olive oil, 1 Tbsp lemon juice, and 1 Tbsp honey.
  10. Pour over 2 ½ cups of coleslaw mix.
  11. This recipe makes 5 servings. Divide your ribs and mac and cheese evenly 5 ways into each of your containers. Store the coleslaw in a separate, smaller container because you won’t want to microwave it.
