A spicy and protein-packed spin on a classic, this buffalo chicken grilled cheese makes an easy and delicious lunch or quick dinner. Ready in 20 minutes and packed with buffalo flavor.

Ingredients

  • 1 1/2 cups (6 ounces) shredded chicken
from chicken breasts, thighs, or rotisserie
  • 3 tablespoons buffalo sauce
    homemade or store-bought
  • 2 tablespoons (1 ounce) greek yogurt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried dill
  • 3/4 cup (2 ounces) shredded cheddar cheese
  • 4 slices (about 7 ounces) sourdough bread
  • 1 tablespoon butter
  • to taste salt and pepper
  • for serving blue cheese dressing, ranch, or buffalo sauce

Instructions

  1. Make your buffalo chicken mixture: Add shredded chicken, buffalo sauce, Greek yogurt, garlic powder, dill, and salt and pepper to a medium bowl and stir well. Add shredded cheese and mix again.
  2. Assemble your grilled cheese: Spread a thin layer of butter on one side of each slice of bread. Add about 1/2 of the chicken mixture to the non-buttered side of one piece of bread. Top with a second slice of bread, buttered side on the outside. Repeat with remaining bread and mixture.
  3. Cook the grilled cheese: Heat a griddle or large skillet and melt butter. Place assembled grilled cheese on griddle and cook for 4-5 minutes, then flip and cook another 2-3 minutes until both sides are crispy and golden brown.
  4. Enjoy: Cut each grilled cheese in half and enjoy hot with sides or dips of choice.
