Maple Sriracha Meatballs with Zucchini Lo Mein

About This Recipe

Turkey meatballs topped with a sauce made from maple syrup, sriracha, honey, ginger, and soy sauce.  Zucchini noodles replace traditional lo mein noodles to lessen the carb load.

Ingredients

  • 2 lbs ground turkey (93/7)
  • 2 tsp salt
  • 1 tsp pepper
  • 2 Tbsp Maple Sriracha sauce
  • ¾ cup grated carrots (use a blender or food processor)
  • 1 Tbsp ginger (minced)
  • ½ cup soy sauce
  • 2 Tbsp ginger
  • ¼ cup sweet onion (diced)
  • ¼ cup honey
  • ¼ cup maple syrup
  • 2 Tbsp sriracha
  • 3 large zucchinis (spiralized into noodles)
  • 1 Tbsp olive oil
  • 2 Tbsp maple sriracha sauce
  • 1 large bunch broccoli
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F.
  2. Prepare your sauce first. Mix all of the ingredients in a blender and blend until smooth.
  3. In a bowl, mix 2 lbs turkey, 2 tsp salt, 1 tsp pepper, 2 Tbsp Maple Sriracha sauce, ¾ cup grated carrots, and 1 Tbsp minced ginger.
  4. Form the meat mixture into balls 1 ½ inches in diameter. It should make around 20 meatballs.
  5. Place the meatballs on a greased sheet pan and bake for 35 minutes or until an internal temperature of 165°F is reached.
  6. While the meatballs are cooking you can begin to cook your zucchini noodles and broccoli.
  7. Steam your broccoli using your preferred method.
  8. Heat a skillet over medium heat and add 1 tbsp of olive oil.
  9. Leave your zucchini raw and add 2 Tbsp of the Maple Sriracha sauce. Stir to coat. You don’t want to cook it as it will soften in the microwave upon reheating.
  10. Using the same skillet, add in the remainder of your Maple Sriracha sauce over medium heat.
  11. Bring the sauce to a boil and cook for 2 minutes.
  12. Reduce the heat to low and allow it to simmer until thickened, around 10 minutes.
  13. Once the meatballs have finished cooking, add them to the sauce and coat each meat ball thoroughly.
  14. If you have extra sauce, you may want to coat the broccoli as well.
  15. This recipe makes 5 servings. Divide your ingredients evenly into each of your 5 containers.
