Miso Ginger Turkey with Rice

About This Recipe

Ground turkey cooked with onions and broccoli slaw. This meal is flavored by the miso ginger dressing that is made in the blender from vinegar and carrots. If you need new flavors in your diet, try this recipe out.

Ingredients

  • 2 lbs ground turkey (93/7)
  • 12 oz broccoli slaw
  • ½ medium sweet onion
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 2 tsp sesame seeds (optional)
  • 1 cup carrots (shredded)
  • 1½ tbsp olive oil
  • 1 tsp sesame oil
  • 2½ tbsp rice wine vinegar
  • 1½ tbsp white miso paste
  • 2 tsp ginger (minced)
  • 2 tbsp water
  • 2½ cups cooked rice

Instructions

  1. Cook enough rice to have 2½ cups of cooked rice. 1 cup of dry rice will yield about 3 cups of cooked rice depending on what kind you use.
  2. Heat ½ tbsp of oil in a large skillet over medium high heat.
  3. Add the turkey and cook until it has browned. Boil off any water if there is any remaining in the skillet. Lightly season with salt and pepper.
  4. Heat another skillet over medium high heat and add ½ tbsp of oil.
  5. Dice the onion add to the skillet. Cook for 2-3 minutes and then add in the broccoli slaw.
  6. Cook until the slaw has softened. You may find it helpful to add some water to the skillet to create steam and cook the vegetables faster.
  7. Once both the turkey and vegetables have finished cooking, combine the two into one mixture and add 1 tbsp of soy sauce. Season with salt and pepper to taste.
  8. Add all of the ingredients to a blender. Blend until you reach your desired consistency. Longer for smoother, shorter for a coarse dressing. I prefer to shoot for somewhere in the middle.
  9. This recipe makes 5 servings. Divide your ingredients evenly between your 5 containers. Top each with sesame seeds if you desire.
