Pad See Ew

About This Recipe

Pad See Ew translates to fried soy sauce noodles. This is a Thai inspired dish made meal prep friendly. It's a great way to use up any vegetables you have sitting in your fridge.

Ingredients

  • 1 lb rice noodles (pad thai noodles)
  • 2 lbs ground chicken (any chicken works fine if you can't find ground)
  • 2 small zucchini
  • 1 medium red pepper
  • 3 carrots
  • 1 tbsp garlic (minced)
  • 1 tbsp ginger (minced)
  • 2 small shallots
  • 2 tbsp olive oil
  • 3 tbsp soy sauce
  • 5 tbsp oyster sauce
  • 3 tbsp rice wine vinegar
  • 3 tbsp water
  • 1 tbsp brown sugar
  • 2 tsp sambal oelek (or sriracha )

Instructions

  1. Prepare your noodles according to the directions on your package. Drain them after they have completed soaking/cooking.
  2. Prepare all of your vegetables before you start cooking, this one cooks quickly.
  3. Wash everything and cut the ginger, garlic, and shallot into a small dice. Use a vegetable peeler to cut the carrots into thin ribbons, cut the zucchini into similar sized ribbons (I have to do this with a knife, the peeler doesn't work for me on the zucchini). Cut the pepper into thin strips.
  4. Mix together the soy sauce, oyster sauce, water, vinegar, sambal, and sugar.
  5. Heat a large skillet/wok over high heat. Add in a bit of olive oil and cook the chicken. Allow it to develop color before flipping or stirring it. You may find that excess water will gather in the pan as it cooks. Remove this with a spoon to keep it from steaming the meat.
  6. After the chicken has cooked remove it from the pan and add in more oil. Add the shallot, ginger, and garlic. Cook for a few minutes or until the shallot has begun to soften.
  7. Next add the carrots and peppers, stirring occasionally for 1-2 minutes. Lastly add in the zucchini and stir to combine. You may find adding a bit of water to the pan will help them cook faster.
  8. If your pan is big enough you can construct everything there, if it is not, get a bigger pot/bowl and combine the chicken, noodles, vegetables and sauce together. Stir to incorporate.
  9. This recipe makes 7 servings. Divide everything evenly into your 7 containers.
