About This Recipe

Mason's favorite noodle recipe: creamy peanut noodles + sticky honey garlic ground chicken + roasted broccoli + chopped peanut garnish. 42g protein per serving.

Ingredients

  • 8 oz Pasta or wheat noodles (tagliatelle)
  • 1/4 cup (60g) Coconut aminos
  • 1/4 cup (32g) Powdered peanut butter (PBfit)
  • 2 tbsp (32g) Peanut butter
  • 1/2 cup Reserved pasta water
  • 1.5 tbsp (24g) Olive oil
  • 12 oz Broccoli florets, bite-sized
  • pinch Salt and pepper
  • 16 oz (1 lb) Ground chicken breast
  • 3 tbsp (63g) Honey
  • 2 tbsp (30g) Sriracha
  • 2 tbsp (30g) Chinese black vinegar (or balsamic)
  • 2 cloves/cubes Garlic (frozen cubes or fresh)
  • 2 cubes or 1 tsp Ginger (frozen cubes or fresh)

Instructions

  1. Prep sauces: Mix powdered PB, peanut butter, coconut aminos in large bowl. Separately mix garlic, ginger, honey, vinegar, sriracha. Set aside.
  2. Cook pasta: Boil water. Start pasta when broccoli done. Cook 1 min shy of al dente. Reserve 1/2 cup pasta water.
  3. Add 1/2 cup pasta water to PB sauce bowl, stir smooth. Toss noodles in sauce.
  4. Pan-roast broccoli: Heat olive oil over medium-high. Add broccoli, salt + pepper. Cook 6-8 min, stirring occasionally, until browned. Transfer to bowl.
  5. Cook chicken in same pan. Brown 2-3 min one side, break apart, fully cook. Add honey-vinegar sauce, cook 1-2 min until caramelizes (don't stir).
  6. Turn off heat, add broccoli back to keep warm.
  7. Plate noodles, top with chicken + broccoli. Optional: peanut scallion garnish.

💡 Notes & Tips

  • Peanut scallion garnish: 1 oz chopped roasted peanuts + 3-4 sliced green onions + 1 tbsp rice vinegar + chile flakes.
  • Low-sodium soy sub: 2 tbsp soy + 2 tbsp water, season to taste.
  • Picky eater win: leave broccoli out, use plain chopped peanuts.
