Pepper Jack Cheeseburger Bowls

About This Recipe

A meal prep version of a cheeseburger.  Ground beef with pepper jack cheese, spicy potatoes, and burger toppings come together in a bowl and served with ketchup.

Ingredients

  • 1½ lbs ground beef (93/7) (or turkey)
  • 1 lb mushrooms
  • 5 Tbsp shredded pepper jack cheese
  • 1 lb frozen broccoli
  • 1½ Tbsp olive oil
  • 10 Tbsp ketchup
  • 5 dill pickle spears
  • 2 Roma tomatoes
  • Salt and pepper to taste
  • 5 small russet potatoes
  • 1½ Tbsp olive oil
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tbsp chili powder
  • salt and pepper to taste

Instructions

  1. Preheat your oven to 450°F.
  2. Wash each of your potatoes thoroughly.  Cut them into a medium dice.
  3. In a large bowl, drizzle 1½ Tbsp of olive oil over the potatoes.  Sprinkle with salt, pepper, 1 tsp of cayenne pepper, garlic powder and 1 tbsp chili powder. Toss the potatoes to coat and spread onto a sheet pan.
  4. Bake for 10-15 minutes and then flip them to the other side and cook an additional 10-12 minutes or until desired doneness is achieved.
  5. Add a sheet pan to the oven while it is preheating to 450°F. Add 1 Tbsp of olive oil to a large bowl with the broccoli and salt and pepper. Lay the broccoli out on the hot sheet pan and roast for 10 minutes. Remove from the oven, turn, and cook an additional 5-8 minutes.
  6. Heat a skillet over medium high heat. Add the ground beef and cook. Once it has browned, season with salt and pepper to taste.
  7. Wash and cut your mushrooms into thin slices. If you want these to develop color, cook them in a dry skillet over medium heat and salt them to pull out the water. They will cook down and brown in about 5-8 minutes. You could also just throw them in with the beef if you don't care to cook them separately.
  8. Mix the mushrooms and beef together and stir to incorporate.
  9. Cut 2 Roma tomatoes into slices.
  10. This recipe makes 5 servings. Divide your hamburger, potatoes, and broccoli evenly between your 5 containers. Top the hamburger with 1 Tbsp of shredded pepper jack cheese. Add 1 pickle spear and 2 slices of Roma tomatoes. Store 2 Tbsp of ketchup sauce in a smaller, separate container.
