About This Recipe

Ground sausage and eggs over a bed of sweet potato chips with grape tomatoes.  A breakfast full of flavor that can provide you will energy to start your day.

Ingredients

  • 12 oz ground sausage
  • 10 eggs
  • 3 sweet potatoes
  • 1 cup grape tomatoes
  • 1 Tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F.
  2. Wash and cut your sweet potatoes into 1/4” thick chips. Place them on a sheet pan and drizzle with olive oil, salt, and pepper. Bake for 10-15 minutes or until soft. Flip half way.
  3. Heat a skillet over medium high heat and brown your sausage.
  4. While the sausage is cooking, cut the grape tomatoes into halves.
  5. Once the sausage is done browning, cook the grape tomatoes for 5 minutes in the same skillet.
  6. Cook your eggs however you prefer. In the picture on the previous page they are hard boiled. If you prefer any other form, I would recommend cooking your eggs the day you plan to eat each meal.
  7. Fill a medium pot with enough water to cover 10 eggs. Bring the pot to a boil and then remove from the heat and cover. Set a timer for 12 minutes.
  8. After 12 minutes drain the water and shower the eggs in cold water to cool. Peel the eggs and cut in half.
  9. This recipe makes 5 servings. Divide your ingredients 5 ways and add to each container.
