About This Recipe

Bulgogi is a Korean dish frequently made from sirloin or ribeye.  It is a sweet tasting meat that is flavored with an Asian pear.  This recipe is made from ground turkey to make it more meal prep friendly.

Ingredients

  • 2 lbs ground turkey (93/7)
  • 2 tbsp soy sauce
  • 1 tbsp sriracha
  • 1 tbsp garlic
  • 1 tbsp ginger
  • ½ medium onion
  • 1 asian pear (any pear is fine if you can't find an Asian one)
  • 2 tbsp olive oil
  • 2 ½ cups cooked rice
  • 2 zucchini
  • 2 ½ cups shredded carrots

Instructions

  1. Cook enough rice to have at least 2 ½ cups of cooked rice. 1 cup of dry rice will yield about 3 cups of cooked rice.
  2. Dice the onion and cut the ginger and garlic into a small mince.
  3. Heat 1 tbsp of oil in a skillet over medium high heat, add the onion, garlic, and ginger. Cook until the onions are soft.
  4. Add the turkey to the skillet and brown.
  5. While the turkey is cooking, grate the pear into a mush. You could use a blender or a food processor here.
  6. Once the turkey has finished cooking, add in the pear, soy sauce, sriracha, and season with salt and pepper to taste.
  7. Cut the zucchini into a medium dice.
  8. Heat 1 tbsp of oil in a skillet over medium heat. Add the zucchini and shredded carrots and cook until soft. Season with salt and pepper to taste.
  9. This recipe makes 5 servings. Divide your ingredients evenly between your 5 containers.
