About This Recipe
Turkey sausage cooked with green peppers and carrots to add in some vegetables in your breakfast. Served with a side of eggs and home fries.
Ingredients
- 10 eggs
- ¼ cup skim milk
- 1 lb ground turkey sausage
- 5 russet potatoes
- ½ sweet onion
- 2 green peppers
- 1 cup shredded carrots
- 2 Tbsp olive oil
- Cooking spray
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F.
- Wash and cut your potatoes into a small dice (around ¼” -½” cubes). You want these small so they cook faster.
- Toss the potatoes in 1 Tbsp of olive oil and season with salt and pepper. Bake for 10 minutes, then remove from the oven and turn. Bake an additional 5-8 minutes or until they have crisped up.
- Wash your peppers. Cut the onion and peppers into a small dice. Chop the shredded carrots into smaller pieces.
- Heat 1 Tbsp of olive oil over medium high heat in a large skillet. Add the onion, peppers, and carrots to the skillet and cook for 3 minutes.
- Add the sausage to the pan and brown.
- Crack 10 eggs into a bowl, add in ¼ cup milk and beat. The secret to perfect scrambled eggs is to beat them until frothy and no egg whites remain unincorporated.
- Heat a skillet over medium heat, spray with cooking spray, and cook your eggs until finished. Make sure not to over cook them as you will be reheating them in the microwave.
- This recipe makes 5 servings. Divide all of your ingredients evenly between your containers.
