About This Recipe
Make an easy seasonal dessert that's healthy and macro friendly. These Pumpkin Protein Balls are delicious and will last you the whole week!
Instructions
- Process or blend the rolled oats until they're broken up.
- Add all the ingredients into a mixing bowl.
- Mix everything together.
- If you left some rolled oats off to the side, mix those in now.
- Put the mix into the fridge for around 15 minutes to make it less sticky.
- Take some of the mix and roll it around in your hands to shape your balls. Once shaped, you can optionally roll them around in a coating like graham cracker crumbs.
- Repeat until the mix is gone, making them however big you want them.
- Stick them in the fridge or freezer to harden up a bit before eating. Also store them in the fridge or freezer.
💡 Notes & Tips
- Halve the calories by making balls half the size! Optional variations include white chocolate chips, cacao nibs, nuts, dried cranberries, shredded coconut, or gingersnaps. Store in the fridge or freezer; smaller balls thaw faster. Freeze for up to 3 months. Macros shown are per ball using sugar free syrup without chocolate chips.
