About This Recipe

This recipe is called Superdeluxo Chocolate Spacecake because I don't quite know what to compare it to. It's like nothing else I've had. The best way I can explain the texture and flavor of this loaf is a cheesecake crossbred with a donut.

Ingredients

  • 1 ½ cups plain non fat Greek yogurt
  • 7/8 cup oat flour ⁣ (¾ cup + 2 tbsp)
  • ¼ cup tapioca flour (cornstarch works too)
  • ½ cup unsweetened applesauce ⁣
  • 2 scoop vanilla casein protein powder
  • 1 tsp vanilla ⁣
  • 1 ½ tbsp splenda
  • 2 eggs⁣
  • ¼ cup chocolate chips ⁣
  • 2 tsp melted butter

Instructions

  1. Preheat oven to 350°F⁣
  2. Sift flours so no clumps remain. Mix the flours together with casein until incorporated. ⁣
  3. In a separate bowl mix the vanilla, splenda, applesauce, yogurt, and eggs. ⁣
  4. Stir the wet ingredients and dry ingredients together in a large bowl.
  5. Spray an 8x8 or loaf pan with oil. Pour mixture in. Spread it evenly. Bang it against the counter to get as much air out as possible. ⁣If you use an 8x8 you may need more chocolate for the topping because of the extra surface area.
  6. Bake for 24 minutes if using an 8x8 or 30-35 minutes if using a loaf pan. Check doneness using when a toothpick inserted comes out clean. ⁣
  7. Allow to cool. Once cooled melt the chocolate chips and butter together. Pour over top and allow to harden. ⁣
  8. This recipe makes 10 slices.
